EAST FLATBUSH - The biggest party of the year in Brooklyn is only two weeks away and vendors are busy making last-minute preparations.

Some of the highlights of this year's West Indian-American Day Carnival includes a caribbean and soul food inspired menu served by Crystal Manor. Patrons will get to enjoy jerk chicken, fish, rice and peas and macaroni pie. The chef from Crystal Manor says a lot of work goes into getting food ready for the carnival. She says meat must be seasoned days in advance and chefs cook for hours the night before.

The carnival takes place on Eastern Parkway on Labor Day.
