Swaths of Caribbean food vendors line Eastern Parkway
Swaths of Caribbean food vendors lined Eastern Parkway in Brooklyn Monday for the annual West Indian Day Parade. 
The smell of Jamaican jerk chicken, oxtail and other Caribbean delicacies filled the air along the parade route.
Rohan Campbell was grilling up traditional Jamaican pan jerk chicken; nearly 400 pounds of it. 

He says he expects to sell it all along with ackee and saltfish, oxtail, and rice and peas -- a variety of popular Jamaican dishes.
Another man, Timothy Cooper, a chef who has worked at the parade is celebrating his fourth year. 
Jerk chicken is a style of cooking native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called Jamaican jerk spice. 

Campbell says it feels good to cook food for all of the people coming out to enjoy the parade and that it gives everyone an opportunity to connect with their Caribbean roots or learn a thing or two about the West Indian culture.
