Boogie Down Bites: Liebman’s Deli

A kosher deli in the Bronx has been around for six decades. 
Its longevity is no surprise to customers who continue to come in for one item they say the deli has perfected.
The matzo ball soup at Liebman's Deli at 552 W. 235th St. is what customers say they continue to come back for.
The chef says he starts by making the matzo balls by mixing eggs and seasonings and adding schmaltz or chicken fat, and matzo meal.
The mix then cools in the fridge for about 20 minutes before the chef hand rolls the batter into the balls.  
Matzo balls are served in chicken broth with noodles. Some residents say the soup has healing properties, but mostly everyone agrees it tastes great.
