Fugghedaboutit Food: Olmsted

Posted: Updated:

A Prospect Heights restaurant is putting a spin on farm-to-table dining by bringing the farm into its backyard.

Olmsted is an urban dining hot spot powered by its sustainable back garden.

“Every time we drain the tub, we spray the fish water over the garden, the tomatoes or whatever we're growing,” says chef and owner Greg Braxtrom.

When the garden produce dies down in the winter, that is when the indoor living wall comes in, growing herbs for cocktails.

Or you can sip on this negroni, infused with pine from the backyard

Even when it's cold outside, there's heated lamps outside so you can sit in the garden and enjoy your cocktail in the space where it came from.

Olmsted is an urban oasis just a stone's throw from Prospect Park, named after the man who designed it, Frederick Olmsted.
