Chef's Quick Tips: Seared steak

This week, Chef Emily Mingrone of Tavern on State shows Tina Redwine how to make perfectly seared steak.
Seared steak
Method:
- preferably use a cast iron pan
- make sure your pan is piping hot (heat it for 2-3 minutes)
- You shouldn't see smoke, but little curls coming from the pan
- coat your steak on both sides in crushed peppercorns (green, black, pink and white)
- sprinkle salt on both sides of the steak
- then add some oil in the pan
- put the steak in the pan
- turn down the heat just a little
- if you don't hear any sizzling add a bit more oil or turn up the heat
- cook each side for three to four minutes
