A Bronx chef is serving his signature-styled home-cooked comfort food not in your average kitchen, but on wheels.
Eric Barron feels most at home in the kitchen.
"I'm in my element. It's my stress reliever. I get in the kitchen, and I cook," he says.
He specializes in comfort food like ribs, wings, mac and cheese, shrimp and grits and more.
"A little bit of everything," he adds.
Barron has been in the culinary business for more than 15 years. During the height of the pandemic, he decided to take a leap of faith by starting his catering business. He took his culinary skills on the road and opened up a food truck.
"My goal was to leave something for my kids. When I am not here, they have this."
But the Bronx entrepreneur ended up putting the brakes on the mobile kitchen because of unseen costs and other roadblocks. He considers the setback a bump in the road, and says it won't deter him from serving up his signature dishes on wheels.
Now that pandemic is slowing down, Barron says his catering business is picking up to help him get back in the food truck business.
