Many Brooklyn residents are eating healthier nowadays thanks to the growing number of restaurants that have joined the Slow Food movement.
John Tucker, the owner of Rosewater Restaurant in Park Slope, says his patrons come not only for the ambiance and the friendly staff, but also because many of them are attracted to the idea of eating food made with locally grown, fresh ingredients.
Tucker?s restaurant is one of the many Brooklyn eateries that have embraced the Slow Food movement, which started nearly two decades ago in an effort to promote sustainable agriculture and support local growers.
Tucker says the scope of his business is limited because he buys his produce only from New York farmers, and his supply of vegetables is delivered within hours of being picked.
?It's great product that is freshest, ripest and most nutritious,? Tucker says.
