Countless types of delicious concoctions can be found in a Williamsburg cheese shop that doesn't use animal milk.
Vegan paradise "Dr. Cow" makes all its products from organic nuts and tree-based ingredients. Pablo Castro and his partner began making cheese in 2006 in their Brooklyn kitchen. They opened up their flagship store a month ago.
From sharp and rich, to gooey and creamy, there is a variety of cheeses available. Castro says they are made by creating a liquid out of soaked nuts and water, letting the liquid ferment for a day and then putting it into a cheese-shaped mold.
Dr. Cow also makes non-dairy milks, cheesecake, pastries, granola and chocolate.
