What's Cooking: Honey tamarind chicken

Jack Grace, of Monsoon in Babylon, shows News 12's Lily Stolzberg how to make honey tamarind chicken.
Recipe:
10 oz Chicken Breast, thin sliced
4 oz Cashews, fried in oil until brown
4 oz Chicken Stock
2 oz Snow Peas
2 oz Fish Sauce
1 oz Lime Juice
1 oz Honey
1 oz Dark Soy
1 oz Tamarind Paste
.5 oz Garlic, minced
.5 oz Ginger, minced
.5 oz Shallots, minced
.5 oz Lemongrass, ground
.5 oz Sugar, granulated
.125 oz Chilis, birdseye, sliced thin
Instructions:
Heat up Pan at medium-high until hot, add enough oil to coat bottom.
Add Chicken and sear golden brown on both sides, remove from pan.
Lower heat to medium, add garlic, ginger, shallot, lemongrass, tamarind, chilis.
Add chicken back to pan, deglaze with fish sauce, lime, stock, dark soy
Add Honey, sugar, let reduce until glazed, add snow peas
Toss until well coated, plate and leave some sauce in pan
Add cashews and plate on top of chicken
Garnish with fresh herbs and chilis.
