Among the brownstones of Cobble Hill, La Vara serves up improvisational southern Spanish dishes to locals.
Chef Alex Raij and her husband opened La Vara to celebrate the Jewish and Moorish legacies in regional Spanish cuisine.
Raji says, “One of the most fun things for us is to not only set a new standard for the quality of Spanish food but also to introduce new dishes to a new vocabulary to the conversation that Spanish food doesn't need to be defined by paella. It's one of the reasons why we don't serve paella actually."
They do, however, showcase their own version of the signature dish, fideua, almost like a fried rice but with noodles.
