Jamaican johnnycakes a big hit at Carnival
A Jamaican johnnycake vendor has been creating sweet and savory Caribbean bites at the Carnival along the Eastern Parkway for over two decades.
A johnnycake is best described as a Caribbean version of a fried dumpling.
The doughy delectable consists of flour, baking powder, a little sugar, some salt, butter and water, and it’s sometimes filled with vegetables like spinach and onion.
Marilyn Fraiser has been cooking the crispy confections at the parade for the past 27 years.
"I love my job. I love being here and seeing the people eat," she says.
